If you’re lucky enough to call Eton or Banana Bay home, or if you’re just hunkering down in a local rental for a few weeks, you know exactly what makes this side of Efate so special. It’s the rugged coastline, the hidden swimming holes, and that deep, quiet peace that settles in once the day-trippers head back to Port Vila. But, let’s be real for a second… when the sun starts to dip and your stomach starts to rumble, finding a decent dinner spot nearby can feel like a bit of a mission, right?
We’ve heard it all before. You don’t necessarily want to drive all the way back into town, and you might not feel like firing up the stove yet again. You want something fresh, something local, and honestly, something you didn’t have to wash the dishes for.
Well, we have a little secret to share. Even if you aren't staying in one of our villas at Papaya Villa, we’d love to have you over for dinner! We call it our "Guest Table," and it’s become the best-kept dining secret in Eton.
What Exactly is a "Guest Table"?
First things first: we aren’t a restaurant. Not in the traditional sense, anyway. You won't find a neon sign out front, a laminated menu with fifty different options, or a waiter in a stiff uniform hovering over your shoulder.
Instead, our Guest Table is exactly what it sounds like, an invitation to join our table. Think of it more like a dinner party at a friend's house… if your friend happened to be a seasoned chef who is obsessed with the Port Vila markets!
When we started Papaya Villa, we knew we didn't want to offer a clinical hotel experience. We wanted hospitality that felt human. That’s why we serve dinner communal-style. You sit down with us, with other travelers from around the world, and with your fellow Eton locals. It’s about sharing stories, passing the salt, and maybe even making a new friend or two by the time the dessert plates are cleared.
No Menu? No Problem!
One of the things that throws people off at first (before they try the food, that is!) is that we don’t have a set menu. Yep, you read that right. When you book in for dinner, you’re putting your evening in Marcus’s hands.
Why do we do it this way? Because it’s the only way to ensure everything on your plate is absolutely, 100% fresh. Marcus heads to the markets with a wide-open mind. If the local fishermen have just brought in some stunning poulet or tuna, that’s what’s on the menu. If the organic growers have the most incredible, sun-ripened tomatoes and fragrant basil, you might be looking at a Mediterranean-inspired feast.
One night it might be a rich, saffron-infused seafood paella that smells like the Spanish coast. Another night, Marcus might be in the mood to roll out some fresh, hand-made pasta, maybe a silky tortellini that melts in your mouth. We’ve done everything from Caribbean-style curries to Portuguese-inspired roasts.
In over ten years of cooking for our guests, nobody has ever asked for a menu twice. They just trust the process (and the chef!). It’s all about the "labor of love." We take the best of what Vanuatu’s land and sea offer that very day and turn it into something special.
The Magic of the Wood-Fired Oven
If you’ve walked or driven past our place, you might have caught a whiff of something delicious drifting on the breeze. That’s likely our rustic wood-fired oven in action. There is just something about cooking over real embers that brings out flavors you simply can’t get from a standard kitchen stove.
Who doesn’t like something out of a wood-fired oven? Whether it's a thick, bone-in steak slow-cooked to perfection or fresh veggies charred just enough to bring out their natural sweetness, the smoky depth is just… WOW.
Two Courses, One Great Price
We like to keep things simple and fair. For our visitors from Eton and Banana Bay, dinner is just 2,800 vatu per person.
What does that get you? A hearty, two-course meal. Usually, that’s a spectacular main course followed by something sweet to finish the night off. We’re talking about real food, prepared with care, served in a setting that’s literally steps away from the coral reef.
And here’s the kicker, we are a BYO establishment!
We know that everyone has their favorite vintage or a specific beer they love to unwind with. Instead of charging you a massive markup on a wine list, we invite you to bring your own. Grab that bottle of crisp white you’ve been saving, or a few cold ones from the local shop, and we’ll provide the glasses and the ice. It keeps the vibe relaxed and the bill manageable. It’s a win-win, right?
Why 6:30 PM is the Golden Hour
We serve dinner at 6:30 PM sharp.
Now, we aren't being "strict" for the sake of it! Because we all eat together at the Guest Table, it works best when everyone arrives at the same time. It’s that magical moment when the day's heat has faded, the garden lights are glowing, and the conversation starts to flow.
Arriving on time means you don’t miss out on the introductions or the first course. Plus, it gives you a chance to soak in the atmosphere. Our dining area is set among 1.6 kilometers of lush tropical gardens. You can hear the waves hitting the reef and the rustle of the palms. It’s pure island bliss.
Meeting the World in Eton
One of my favorite things about the Guest Table is the mix of people. You might find yourself sitting next to a couple who just arrived from Paris, a solo traveler from Melbourne, or someone who’s lived in Port Vila for twenty years.
There’s something about a shared meal that breaks down barriers. We’ve seen guests swap travel tips, life stories, and plenty of laughs. For our neighbors in Eton and Banana Bay, it’s a fab way to feel connected to the wider world without ever leaving your backyard.
A Few Ground Rules (The Easy Kind!)
Because we prepare everything fresh and seats are limited, we do have a couple of "musts" for our outside diners:
- Book by 1:00 PM: Marcus needs to know how many mouths he’s feeding before he finishes his market run! Please make sure to reserve your spot by lunchtime each day.
- Allergies: This is a big one. Since there’s no menu, you MUST let us know if you have any food allergies when you book. We want everyone to have a safe and delicious experience.
- Payment: We prefer cash, but we can accept credit cards if needed (just keep in mind there’s a 3% processing fee).
