At Papaya Villa, we operate on a concept we call the Guest Table. It’s our favorite way to do things. I head out to the Port Vila fresh food markets and see what’s popping. If the Poulet fish is looking spectacular, that’s what we’re having. If the organic watercress is extra peppery and crisp, it’s going in the salad.
It’s about trust, and honestly, it takes all the stress out of your night. No more debating over forty different options. You just show up, pour a glass of wine (we’re BYO, which our guests love!), and let us take care of the rest.

When Shoran and I cook for you, we aren’t just “staff”: we’re your hosts. We’ve spent years honing our hospitality skills, and we take immense pride in the labor of love that goes into every plate.

- Privacy is King: While resorts are busy trying to fit as many tables as possible into a room, we offer complete seclusion. You often won’t see another soul during your stay except our gardeners and the resident “security team” (our Chihuahuas, Dora and Benny).
- The Scent of Saffron and Sea Salt: We use a rustic wood-fired oven for almost everything. There’s something primal and wonderful about the smell of roasting meats and vegetables mingling with the salty ocean breeze. It’s a sensory overload in the best way possible.
- Your Pace, Your Way: In a buffet, you’re on a treadmill. At Papaya Villa, if you want to linger over your dessert and watch the stars for an hour, go for it! We aren’t trying to “flip” your table.

We’re a true beachfront Bed & Breakfast. That means we don’t just “happen” to serve breakfast; we obsess over it. We’re talking farm-to-table (and ocean-to-plate) before it was a trendy buzzword.
